Ice cream in summer needs no explanation. It’s essential and necessary. My new ice cream recipe book is extensive and amazing. But due to the fact that I didn’t have one of the ingredients listed (and ice cream recipes need to be followed closely), I opted for this recipe. It was requested that I incorporate blueberries, so made a blueberry compote to be added. Adding mix-ins to the ice cream maker is super easy, and now I have purple-colored ice cream (and a VERY happy blueberry-loving boyfriend).
Super simple. Super delicious. It’s summer. Eat ice cream. Everyday.
Blueberry Compote
- Blueberries (at least ¼ cup)
- Sugar, to taste
Directions
– crush blueberries
– heat blueberries and sugar in small saucepan until a thin liquid forms
– pour in ice cream half way through mixing (also AMAZING on waffles)
