Billy’s Bakery

Billy’s Bakery has been around, guys. It’s got the vibe of Magnolia without being too cutesy. Billy’s had a part of the winningest cupcake crown during Serious Eats original cupcake contest. In 2010. So in five years, the cupcakes are still doing their thing. Besides cupcakes there are brownies, magic bars, whole cakes, banana pudding, just to name a few. Intrigued? You should be. They really know what they’re doing. The array of cupcakes isn’t crazy but a step above those usual suspects — vanilla and chocolate. On a gloomy day in New York I went with vanilla chocolate combo. There’s just something about eating a yellow vanilla cupcake with rich, milk chocolate frosting. Especially on a gloomy day. Back in the day, when high school sucked, my mom would make a giant golden butter cake with chocolate frosting and we’d go to town on at thing with two forks as we watch Romy & Michelle. My mom rocks. But so do these cupcakes.

This cupcake, as I’m sure you were expecting, is banging. It looks professional and has that perfect frosting loop that has eluded me since my first days of cupcake exploration. This first bite exuded great balance, a rich chocolate frosting, and a fluffy cake. This cake was excellent. Fluffy, with a buttery vanilla taste.  It’s a really solid cupcake. The frosting was good, but not great. It was light and creamy and had good flavor, but I detected some graininess and an aftertaste that was reminiscent of canned frosting. The cake:frosting ratio showed off the perfect combination and balance of flavors, although I definitely wanted more frosting. Even though it wasn’t my favorite, it didn’t quite cover the whole cupcake. Overall, this is a really solid cupcake and I’m pretty sure they will make it into Round 2. Can’t wait to try more flavors. And probably cake. And brownies. And banana pudding too. Obviously.
